Sunday's WI





Good morning all. Just wanted to post really quick my WI. I am VERY glad to say the scale is continued to move in the right direction....down! I am now down to 207.4 lbs. YEAH!! That means I am down 2 lbs for the week!

Just goes to show me that if I stick with it I WILL lose the weight. I am off to Walmart on my weekly quest to buy, cook and prepare some healthy foods for the week. Being prepared is really the key for me!!

King Ranch Casserole and Swiss Steak Recipes!!

King Ranch Chicken Casserole

Ingredients:
1- 10 oz. can chicken breast, drained
1 can 98% fat free cream of mushroom soup
1 can Rotel tomatoes
8 corn tortillas, cut into fourths
1 cup fat free shredded cheddar
1 small onion, chopped
4 cloves garlic, minced
1/2 cup celery, choppedsalt and pepper to taste

Directions:
Saute onion, garlic and celery in a nonstick skillet coated with cooking spray until
tender. Add soups, Rotel tomatoes and chicken; heat and mix thoroughly. Add salt
and pepper to taste. Spray 9x13 baking dish with cooking spray. Layer 1/2 of tortillas
in bottom of dish. Pour 1/2 of soup mixture over tortillas. Sprinkle 1/2 of shredded
cheese over soup mixture. Repeat layers ending with cheese. Cover with foil.

Bake at 350 degrees for 40 minutes. Uncover and cook additional 10 minutes. Let stand for 5 minutes.

Serves: 6 Points: 4


Swiss Steak

4 beef cube steaks (4 ounces each)
1 tablespoon Canola oil
1 medium onion, chopped
1 celery rib with leaves, chopped
1 garlic clove, minced
1 can (14 –1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 beef bouillon cube
1-tablespoon cornstarch
2-tablespoons cold water

In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. In the same skillet, sauté onions, celery and garlic for 3-4 minutes or until tender. Add the cut up tomatoes, tomato sauce and bouillon cube. Return steaks to the pan and bring to a boil. Reduce heat; cover and simmer 1-1/4 to 1-3/4 hours or until tender.

Combine cornstarch and water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

Yield: 4 servings @ 5 pts each!

65 mg cholesterol

WI and some wonderful recipes!!

Don't you just love it when your able to get alot done on Sundays and your set for the week? Are you ready? Well I am!! Since I got back on the wagon so to speak I have found being prepared was the single most important thing that really keeps me on track. How so you ask?
I am the type of person that can't stand eating the same thing day in and day out....especially a sandwich for lunch each day! YUCK!!! I remember my step father Jr would take his ham sandwich to work EVERY day! I use to ask my mom how can he do that and her reply was I guess he likes it! I have to admit I like alot of different types of foods, but if I had to eat one thing day in and day out it wouldn't take long to get sick of it...even if it was my favorite like Chinese!!Yummmm.

I love to cook and experiment with new recipes. So each weekend I look for new recipes to try the following week, make my grocery list and off to Wally World I go! I have really come to enjoy doing this and have to admit it dawned on me today when I was making my Swiss steak that a few years ago I would have never been cooking with tomatoes, onions or heaven forbid celery. Those were things I NEVER ate before to be honest and now I love them, but they do have to be cooked!!! I love all the other veggies raw or cooked but I have never like tomatoes on a sandwich, raw onions or raw celery... don't know why just didn't!!

OMG....today I made the most wonderful cake. I was reading the message boards over at the WW site last night and somebody posted the recipe. When I say this cake was the BOMB...I am not lying. I think it's called "The Diet Coke Cake" Here's the recipe. Try it you won't be disappointed I swear!!

1 box of cake mix (your choice)
10 oz diet coke or diet 7-up (anything diet works)
2 egg whites or Eggbeaters
8 oz Cool Whip Free
2 small boxes FF SF Instant pudding (your choice)

- Mix 10 oz diet soda and egg whites with the cake mix. Pour into 12x13 inch pan that has been sprayed with nonstick cooking spray or make cupcakes. Bake according to directions on box.
Once cooked and cooled mix one box of pudding mix with the cool whip free and use as icing!

OK here's what I did. I used a "spice" cake mix, diet 7-up and French vanilla pudding. This cake was the BOMB!!! Now to figure the points here's the tricky part. All you count for the cake is the mix and decide how many servings you want to make. I made 2 cakes 9x11 and used one 8 oz cool whip and pudding per cake. I made 24 servings @ 3pts each!!

You can not tell this cake is diet at all. It cooked up just like a regular cake and you can't taste the diet soda. There are ton's of variations for this cake. Just google "Diet Coke Cake" and you will see. Next I want to make one with carrot cake and cream cheese pudding....YUM! Oh well that's for another week.

I also made some potato salad @3 pts, Swiss steak @ 5 pts, sausage and chicken gumbo (w/o the rice) @ 3pts, my cake @ 3pts of coarse and chicken pot pie @ 4 pts!!! YUMMO!!!! Umm did I mention I am ready for the week..lol. See cooking all that stuff gets me excited about my plan for the week, saves me LOTS of time each night because all I have to do is heat it up in the micro and eat. But the best thing is I won't hit the fast food drive through in desperation!! Yeah me.

If anyone wants those recipes just let me know and I will send them to you or just post them here!! Last week it was Kings Ranch Casserole and Amanda's Creamy Lasagna!! Just those two items kept my refrig full and it was so nice to come home and have dinner ready in 5 minutes!!

This weeks WI was great!! I am down to 209.4 lbs!!! That's almost 4 pounds down this week!!! Yeah me...see what being prepared will do for you? I am hoping to keep losing. I remember being under 200 BRIEFLY and then the shit hit the fan here at home and I started coping the way I use to, by shoving crap down my throat hoping it will numb the pain! It didn't surprise surprise!! :(

Hey if any of you have some great recipes you love then share them with me!! I am looking for things that can be prepared on Sundays and reheated during the week!! Nothing like sitting down to a home cooked meal that you have prepared and not having to guess at your points!! You know it's fresh and wholesome!!

Hummm now I am thinking about making a few Fiber One pancakes and freezing them for the week. A stack of 3 pancakes is only 3 pts!! I love them with SF syrup!!
Remember NOTHING is forbidden on WW... you just have to count the points. ;-)
